Broccoli and Anchovy Pasta

I realise this may not sound delicious to everyone but for the 5% of the population who are with me that both broccoli and anchovies are delicious, it's great!


If you're not keen on fish, don't discount anchovies because they tend to have a lovely savoury flavour rather than an overly fishy one like in this pasta dish.  They also work brilliantly with lamb.


Broccoli and Anchovy Pasta - Serves 1

Ingredients

75g, 2.5oz Pasta (or more if you're hungry)
100g, 3.5oz Broccoli
1 Clove garlic, very finely crushed or grated
6 Fillets of tinned anchovies (drained of oil)
1 tsp Extra virgin olive oil plus more to serve

Method

Boil the pasta following pack instructions.  In the meantime, boil the broccoli for 5 minutes or until cooked.  When the broccoli is done, drain and mash with a fork fry the garlic and chopped anchovies in oil gently until the anchovies meld in then add the broccoli.  By now the pasta should be ready and when it is, mix in with the broccoli mix and a little of the pasta cooking water.



Season with salt to taste then serve on a plate with a little more olive oil drizzled over.
